To make the cookies, I used Hodgson Mills GF cookie mix. to the left is a link for buying it off Amazon. It sells for less than $3.00 at Walmart. Score!
I followed the directions on the back of the box but added to the dry mix; 1 tsp of Chinese Five Spice and 1/4 tsp of cardamom. I also added 1 tsp of vanilla extract and 1 of almond. Also, a cup of Hershey's cinnamon chips were added to the mix. After blending it all together, I used a cookie scoop so that they would be uniform in shape and size. I scooped them into my hand, gently pressed them flat then dipped just the tops in a sugar/spice (1/b TBS Five Spice to 4TBS of sugar) mixture before placing them on a baking stone and cooking them at 350 for about 12 minutes. Delicious!
i recommend eating them with a strong, black tea as they will compete and/or over power weak teas or teas that are also spiced.
